The 320-acre, 18th century Wyebrook Farm is located in Honey Brook, PA.  The owner of this farm, Dean Carlson, left his former life as a bond trader on Wall Street to restore this foreclosed farm after experiencing his own personal epiphany upon reading Ominvore’s Dilemma by Michael Pollan.

“My goal was not just to build a sustainable farm,” Carlson writes, “but to create a welcoming space where the community could gather, eat, and buy their food locally. On the farm, animals spend every day of their lives, including their last, in a healthy environment, and I envisioned a restaurant and market that would treat the meat from those animals with the respect they deserve.” Carlson’s vision of sustainable animal husbandry has manifested itself beautifully at Wyebrook Farm, and its success is recorded in Field & Feast, a cookbook co-authored by local chef Ian Knauer of Stockton’s The Farm Cooking School.
